Flap steak is very similar to flank steak as the two steaks come from the same area of the cow. Both are ideal when cooked hot and fast, then sliced thinly against the grain. When choosing between flap or flank steak, note that flap steak typically has better marbling and is a bit more tender than flank steak which has a stronger "beefier" flavor. Of course, both are delicious!
