Red Beans & Rice with Fresh Ham Hock

This delicious mix of rice, beans, and ham hock makes a hearty, healthy meal and is perfect when served with hot corn bread!

Ingredients
- (1lb.) Pork Ham Hock Fresh
- (1lb.) Red Beans
- (3/4 tsp.) Salt
- (4 cups) Water
- (2tsp.) Bacon Grease (Lard or Oil may be substituted)
- (6 cloves) Garlic
- (1 cup) Chopped Onions
- (1 tsp.) Ground Thyme
- (1) Bay Leaf
- (1/2 tsp.) Black Pepper
- (4 cups) Rice
Directions
Wash beans, cover with water, and let them soak overnight at room temperature. Sprinkle fresh ham hocks with 1/2 tsp. of salt. Heat bacon grease on stove and use it to brown the ham hocks for 3 minutes on each side. Put ham hocks, beans, remaining salt, 4 cups of water, garlic, onions, thyme, bay leaf, and black pepper in crock pot and mix. Cook in crock pot on high for 3 to 4 hours or until beans are tender. Drain juices from beans and ham hock and use to cook rice until tender, adding additional water for liquid if needed. Remove the bay leaf from beans and ham and serve over a bed of rice.
